This apple dutch baby pancake with freshly milled flour takes a spin the traditional dutch baby pancake by adding apples and ground cinnamon! It’s made with 100% freshly milled flour and healthy protein making it a perfect nourishing breakfast.

I am always trying to get healthy protein and whole grains in wherever and whenever I possibly can. It not only helps me feel better and have lasting energy throughout the day, but I’ve noticed that it also is super helpful for my toddler to have a well rounded meal. The whole day seems to run smoother when we’ve started the day off with a good breakfast.
I love dutch baby pancakes as they are super high in protein and fiber, and are easy and fast to whip up. Mix the batter, stick them in the oven and you can go on to other things while they bake. They bake quickly too so are great for busy mornings or when you need a high protein meal fast.
For this recipe I’ve added apples and cinnamon to make it extra special! This makes it perfect for a fall breakfast or late weekend brunch when apples are season and abundant. I love to serve this dutch baby with pure maple syrup but it is also delicious as is without any additional topping or garnish.

Ingredients

Freshly milled flour – I like to use soft white wheat berries for this recipe. I usually measure out my wheat on a scale then mill it fresh right before mixing up the batter. The fresher your flour is the better!
Milk – I use whole milk.
Eggs – farm fresh is best!
Apples – I used 2 medium sized gala apples and it was just right. You can use any kind of apple that you have or whatever is your favorite! You can peel or leave the peels on depending on the texture you like.
Butter – I used salted butter.
Coconut sugar – you may substitute brown sugar or cane sugar.
Cinnamon, Vanilla, and Salt – these ingredients add warmth, spice, and bring all the flavors together.

How to Make an Apple Dutch Baby Pancake with Freshly Milled Flour



Step 1: Preheat the oven to 425°. In a large oven safe skillet or cast iron pan melt the butter (1/4 cup) over medium heat.
Step 2: Using a handheld peeler or paring knife, peel the apples if desired. Core them and slice them thinly. Add them to the melted butter along with 1 Tbs. of the coconut sugar and the ground cinnamon (1 tsp). Combine the ingredients and cook until the apples a slightly soft and the syrup is bubbly.



Step 3: While the apples are cooking combine the freshly milled flour (100 grams), salt (1/2 tsp), and the remaining coconut sugar (1 Tbs.) in a medium sized bowl. Whisk to combine.
Step 4: Add the eggs (4), milk (3/4 cup), and vanilla extract (1 tsp) to the flour mixture. Whisk until the ingredients are fully combined and the batter somewhat smooth. It’s okay if there are a few small lumps remaining.



Step 5: Remove the skillet of apples from the heat. Pour the batter over the top of the apples and place the pan in the preheated oven. Bake at 425° for 15-20 minutes until the pancake is puffy and golden around the edges. Remove from the oven, slice, and serve!

How to Serve
This dutch baby pancake is delicious served with pure maple syrup drizzled over the top. Homemade whipped cream or a dusting of powdered sugar or a combination of these also make for great topping options!
How to Store and Reheat Leftovers
Store any leftovers in an airtight container in the fridge for up to 5 days. The best way I’ve found to reheat these is to chop it up some and fry in a skillet on the stovetop until they are hot. My toddler loves the leftover cold, straight from the fridge!
